Greek chickpea-lemon soup

1 lbs chickpeas, soaked overnight in salted water, drained

3 tbsp olive oil

2 medium onions, diced

2 stalks of celery, sliced

1 large carrot, sliced

5 cloves of garlic, thinly sliced

1½ qt vegetable broth (or water)

2 fresh bay leaves (or 4–5 dried ones)

2 tsp black peppercorns, ground

1 tsp dried rosemary

pinch of cayenne pepper powder

1 clove of garlic

½ cup parsley, minced

¼ cup lemon juice (2 lemons)

salt, to taste

dill, chopped, for garnish

Sauté onion, celery, carrot, and garlic in olive oil until the vegetables are softened. Add chickpeas and broth. Bring to a boil and then lower to a simmer. Add bay leaves and dry spices and cook covered until the chickpeas are soft, about 45 minutes.

Ladle out about 1 cup of the chickpeas and blend with garlic until very smooth. Stir purée into soup along with parsley, lemon juice, and salt. Garnish servings with dill and a drizzle of EVOO.

Friendly fire: A second bowl of soup and some Olive-oiled up bread does sound pretty satisfying not gonna lie.

Argumentative Fire: looks like there is a 3rd to a Half of a can worth of chickpeas which is only about 120-240 calories according to google, and you saying that one bowl of soup contains 22g of olive oil?

The bowl is deeper than you think.

269 calories per cup of cooked chickpeas × 1.5 cups = 404 calories

wtf is a gram

200 calories of oil ÷ 120 calories per tablespoon = 1.67 tablespoons of oil.

About 90 calories of oil comes from the oil cooked in. 110 thus comes as the garnish. Drizzling a tbsp of EVOO over soup is reasonable.
