I made Fresh Spring Rolls with peanut dipping sauce, not as pretty as I hoped, but tasted good.
Inside the roll is smoked tofu, vermicelli (rice noodles), cucumber, carrots, red sweet peppers, avocado, black sesame seeds, and thai basil.
The dipping sauce is chunky peanut butter, hoisin sauce, and chilli sauce. The sauce did not come out as well as I hoped, but found another recipe I will try later.
Filling & refreshing.
